If you are tired of the same old tacos not that tacos are ever boring but you want to try something new and super delicious not to mention this is an easy one pot taco skillet meal you can make in less than 20 minutes and who doesn’t love that.

You will need Salsa, I like the medium but if you don’t like spicy mild works as well. This works as a binder to hold all your ingredients together.
Ground beef that is 90/10 because you don’t want all that grease or if you want you can do it first drain it and remove it from your pan and add it later.
A can of corn with red peppers, I think it is a fire-roasted one or just use a regular can of corn or frozen corn and use a red pepper sliced along with onions.
A can of tomatoes with green chilies and some seasonings like salt, pepper, garlic powder, cumin, and paprika.
I like to use corn chips on mine but if you don’t have any you can try substituting with something else.
And cheese, that is a must for any recipe but it goes great in this one, I used sharp cheddar just a handful.

One pot taco skillet
Here is how to make this simple meal in 20 minutes, get all your ingredients together, chop up half an onion and add it to your pan with some butter or cooking spray.
Let them cook for a minute or two then add in the corn and red pepper let that cook and melt the flavors in add in your tomatoes and green chilis and taco seasoning.
You can also add in black beans, I didn’t have any so I didn’t add them but it would be great in this dish!
I buy the kind in the cans but you can make it also. Here is the recipes for making it yourself.
- 1 tsp Salt
- 1 tsp Pepper
- 1 TBS Chili Powder
- 1/2 tsp Garlic Powder
- 1/4 tsp Onion Powder
- 1/4 tsp Crushed Red Pepper Flakes
- 1/4 tsp Oregano
- 1/2 tsp Paprika
- 1 1/2 tsp Cumin
Put in your ground beef and other seasonings cook it so that all the flavors melt together. Once it is cooked add in the salsa and let it cook for 5 minutes or so to get all the flavors mixed.
(If you already cooked your beef you can add it in now and let it gain the flavors of the dish. Just add in your salsa and seasonings so that it can cook together for a few minutes)
Put in your cheese and put the lid on for a few minutes to melt it and then add the corn chips on top.
Serve and Enjoy!!
This is a great one for kids that are a bit picky, make sure to not make it to spicy for them if they aren’t into spice.
Ingredients
- 1lb Ground beef
- 1 10.5 oz Can of Roasted Corn with Red Pepper
- 1 10.5 oz Can of Tomatoes With Green Chilis
- 1 Jar of Salsa
- 1 Onion
- 1/2 Cup of Cheese
- 1 Bag Corn Chips
- 1/4 cup Taco Seasoning
- Pinch of Salt
- Dash of Pepper
- 1/4 tsp Cumin
- 1/4 tsp Garlic Powder
- 1/4 tsp of Paprika
Directions
- Slice up your onion and add it to your pan with butter or some oil, you can use cooking spray if you like. Add a pinch of salt
- Cook onion until soft a few minutes then add in corn and red pepper and the tomatoes and green chilis
- Put in your taco seasoning and stir it around, this helps bring out the flavor
- Add your beef and brown it up, sprinkle with paprika, cumin, pepper, and garlic powder while browning
- Put in your salsa and let it cook for a few minutes and turn off the burner
- Add in your cheese, put a lid on to melt it all together
- Add in the corn chips and serve
Final thoughts on one pot taco skillet
This is a very simple dish that you can add other ingredients to and make it your own.
A side note: Don’t drain your tomatoes and green chilis or the corn and red pepper, the juices help it cook and keep it from sticking to your pan.
Use what you have in your pantry, add in some black beans or jalapenos if you like some spice you can even put a pinch of Cheyenne pepper if you want a little zing to it.
This is one of the simplest one pot meals I have ever made and I hope that you find it to be as delicious as we did.

You can even put it in a tortilla if you don’t have any corn chips for a change from regular tacos.
