For a quick week night or weekend dinner you can whip up this easy chicken stir fry!
I always buy a rotisserie chicken and cut it up to freeze for a quick meal any time. As long as you have fresh or frozen vegetables to throw in a pan and cook up, it makes for a quick meal any time.
You can use frozen or fresh chicken that is cut up and add it to a pan with oil or butter add a little salt and pepper and any other seasoning you may want for flavor.
I like to add Cajun to my chicken but any flavor you want is fine. It does depend on what flavor stir fry sauce you are going to add to it.
In this recipe I am adding sweet and sour sauce so Cajun won’t taste very good mixed with it. When I make teriyaki the Cajun seasoning tastes fantastic!
4 Ingredients needed:
2 cups of chicken cut up
1 bag frozen vegetables or fresh (1 red pepper, 1 yellow pepper, half onion, hand full of asparagus or broccoli, 6 mushrooms) whatever you happen to have on hand
1 bottle of sauce for flavor or home made, just enough to coat ingredients
1 saute pan with a lid
canola or olive oil or butter
Instructions

- Heat the oil or butter in a large pan and add the chicken along with some salt and pepper. You can add a little garlic if you wish and some onions or the onions can be added later when you cook the vegetables.
- Cook chicken until heated through or if fresh make sure it is no longer pink, about 5 to 7 minutes depending on the size of the chicken pieces. Set chicken aside on a plate.
- Add more oil or butter to the pan and put vegetables in pan, you can use fresh as well basically whatever you have on hand, red and yellow peppers, onion, mushrooms, broccoli and asparagus whatever vegetables you want or have on hand.
- Saute on medium with lid on until they are still slightly crisp and not soggy. No one wants soggy vegetables in their stir fry.
- When it is done add chicken back into pan and stir in sauce. You can either make your own or if you don’t have time use store bought.
I like Kikkoman brand myself but whatever your preference is fine. I also like to make rice to go with it, either white rice or chicken fried rice. Sometimes a bag of the instant flavored rice if I don’t have time to make it.
Serve immediately and enjoy a quick dinner your family is sure to love.
